The Springiest Spring

It's been an unbelievably lovely spring here. Everything seems to be bursting forth ahead of schedule. I hope it means that we'll be seeing lots of produce early at the farmer's market. I've decided to forgo a CSA this year and instead try to make it to at least one farmer's market a week. I've got several to choose from, so it shouldn't be too hard. We'll see.

Menu for the Week of April 25th

Sunday: Burgers with Mushrooms and Swiss Cheese, Sweet Potato Fries, Roast Asparagus
Yeah- local asparagus is here! (And local grass-fed beef.)

Monday: Lentil & Rhubarb Curry *New Recipe*, Rice
From the Flexitarian Table (recommended by Meg). This recipe seemed to out there that it had to be good. And it was. Not great, but good. I'm looking forward to trying another recipe from this cookbook next week.

Tuesday: Paprika Roast Tofu, Zucchini, Cous Cous
Makes for great leftovers. I make a ton of extra yogurt sauce.

Wednesday: Pizza with Sopressata and Tomatoes, Sauteed Spinach with Garlic and Raisins

Thursday: Sweet-Scented Hyderabad Ground Lamb and Curried Lentils with Rice
From the freezer

Friday: Pasta with Mozzerella... and whatever else I find to throw in
